For flying helicopters you need practice. The first helicopter flight I made in FG was with the Robinson R-44 Raven, It's in my opinion the easiest flyer because it has some tricks. When using ctrl + f (auto hover) the R44 will almost take off automatically when you give some throttle, when you're from the ground you could press ctrl + f again and you can control the heli. After some practice you could take-off by your own. And after that you could try another heli which is something harder to fly, I would choose then the Bell UH-1. And I'm mostly controlling helicopter's with the mouse in joystick mode (cursor looks like a +).
Here is a list of helicopter from easy to hard in my opinion:
1. Alouette II (Easy (fake) FDM)
2. Robinson R-44 Raven
3. Alouette II
4. Bell UH-1 Huey/ 212 Twin Huey / 412 Griffin
5. McDonnell Douglas MD-902 Explorer (My helicopter )
6. Boeing CH-47 Chinook
7. Sikorsky Aircrane
8. Bell AH-1 Cobra
7. Mosquito XE
8. Sikorsky S76C
9. Eurocopter EC145 (now Airbus H145)
10. Aerospariale AS350 / Eurocopter EC130 (Same FDM, only the EC130 is harder to start)
11. Boeing-Sikorsky RAH-66
12. Aerospariale AS330 Puma
13. Sikorsky CH-53 (the version made by Pierre Duval)
14. MBB BK 117
15. MBB BO 105
16. Hughes MD-500e
17. Robinson R-22 beta
18. Eurocopter EC135 (now Airbus H135) (newest version)
19. Sikorsky S-58/H-34 (to get it in the air I always drive a few meter and slowy giving more throttle)
20. Sikorsky UH-60 Blackhawk (same advice as the S-58)
21. Alouette AS 332 (in my opinion not airworthy )
List is not complete, but I should start by the R-44 and follow the list further. If you want to know my opinion about where a should put an specific helicopter in this list just ask. And if you still having trouble flying a heli.

That's IH-COL fate 70% of the times I attempt at lifting those rotatories.

There are two helicopters I can actually fly in FG. It's not a nice picture though, but I can relatively often take the off, fly to about where I want to go and land them in one piece if it's not on a drill platform or a building: The Mi-24 and the Aircrane. Now idea why those work for me and others don't (with the exception of the S-76C that thing has a dozen buttons with labels I don't even understand, so I know exactly what kills me there).

Helicopter legs will be all about survival for me. I flew in my military days in some of those flying coffee grinders. Scared the heck out of me and I was always happy if they let us jump out.
